Vietnam's Double Wash Process
The double wash process, also called double fermentation, is a meticulous method often used in East Africa, now Vietnam to produce exceptionally clean and bright coffees. After depulping, the beans are first fermented in water to break down mucilage. They’re then washed, soaked again in clean water for a second fermentation, and washed thoroughly before drying. This extra step enhances clarity and refines the flavor.
Coffees processed with the double wash method are known for their vibrant acidity, floral and citrus notes, and silky mouthfeel. Expect a crisp, elegant cup with sparkling complexity and refined sweetness.
