This season, our long-standing partner, Zanya Farm, takes it even further, introducing a bold evolution in post-harvest processing. Ripe coffee cherries are carefully co-fermented with dried lavender over 100 hours, creating a profile that is both expressive and beautifully composed.
In the cup, delicate floral aromatics lead, elegant, lifted, and perfumed without overwhelming. Bright citrus notes follow, reminiscent of lemon and orange, bringing clarity and structure. As it cools, a soft sweetness unfolds, finishing with a smooth, creamy hint of vanilla that lingers.
Refined and layered, this is Catimor, Catual, and Caturra reimagines, showcasing a new level of aromatic depth and balance.

The Lavender Co-fermented Wash Process
Harvested from the cool slopes of Langbiang Mountain, the cherries are carefully layered with lavender in sealed fermentation tanks, where native yeasts initiate a transformation.During this slow, natural fermentation, lavender’s essential oils and aromatic compounds deeply infuse into the coffee beans, subtly reshaping Catimor’s flavor profile into something remarkably elegant and unexpected.
The floral complexity of lavender pairs naturally with coffee’s inherent depth, enhancing its brightness while adding a soothing, aromatic softness that elevates the cup.
