This season, Zanya Farm introduces a bold innovation in post-harvest processing: a 100-hour co-fermentation of ripe Catimor cherries with dried lavender flowers.
The result is a cup that defies expectations:
Delicate floral aromas lead the way, followed by a bright citrus acidity reminiscent of lemon and orange. As the cup evolves, soft sweetness blooms across the palate, gently fading into a long, creamy vanilla finish.

The Lavender Co-fermented Wash Process
Harvested from the cool slopes of Langbiang Mountain, the cherries are carefully layered with lavender in sealed fermentation tanks, where native yeasts initiate a transformation.During this slow, natural fermentation, lavender’s essential oils and aromatic compounds deeply infuse into the coffee beans, subtly reshaping Catimor’s flavor profile into something remarkably elegant and unexpected.
