The natural process, also known as dry processing, is one of the oldest methods of coffee production, emphasizing rich, fruity flavors. In this method, coffee cherries are dried with the fruit intact, allowing the beans to absorb the sugars and flavors from the surrounding pulp.
After drying, the cherries are hulled to remove the outer layers. This process requires careful attention to avoid over-fermentation but, when done well, results in coffee with bold, fruity notes, fuller body, and lower acidity.
The natural process is popular in regions with consistent sun, like Vietnam, Ethiopia and Brazil, for producing distinctive, flavorful coffees.
