The Mountain Water Process is a gentle, chemical-free method used to remove caffeine while preserving the natural character of the coffee. Green coffee beans are soaked in pure mountain water, allowing the caffeine to slowly separate from the bean. The water is then passed through special filters that remove the caffeine while keeping many of the coffee’s flavor compounds intact.
