Recently, double-washed processing has been incredibly popular in specialty coffee. It is generally viewed as an effective way of sorting out unripe cherries and other defects, and achieving a “clean” taste in the cup.

The last of the 2024 harvest season from the infamous Lang Biang mountain in the central highlands of Da Lat, Vietnam; available only at Virtuoso Coffee while supplies last. Finally, a premium coffee from Vietnam that not only reaches, but exceeds, the highest quality specialty coffee grades the world most often associates with Colombia or Panama Geishas. 

You'll taste notes of tropical fruit, like passionfruit and pineapple, with subtle hints of white flowers and Jasmine with a smooth, light finish, and juicy aftertaste.

The Double Washed Process

The double washed process, also known as double fermentation, is a meticulous coffee processing method that highlights clarity and vibrant acidity. Used primarily in regions like Kenya, and now in Vietnam, this technique involves fermenting and washing the coffee beans twice.

After removing the cherry's pulp, the beans undergo two stages of fermentation, with thorough washing in between. This extra step refines the coffee, creating a clean, crisp profile with bright, distinct flavor notes. The double washed process is prized for producing exceptional coffees with pronounced acidity and enhanced flavor complexity.
